Simply place each peach in boiling water for about 45 seconds, then transfer it to cold water. The skin should loosen and peel away easily. If peach skin doesn’t bother you, you can absolutely skip this step and slice the peaches with the skin on, the cobbler will still turn out delicious.

→ Do not overmix the batter - Once you add the dry ingredients, mix the batter just until everything is combined. Overmixing can develop too much gluten, which can make the cornbread topping dense or tough instead of soft and tender. A few small lumps in the batter are completely fine.

→ Use a ceramic baking dish - I recommend baking this cobbler in a ceramic pan because it distributes the heat gently and evenly, helping the peaches become soft and jammy while the cornbread topping bakes beautifully golden. I bake mine at 180°C for about 45 minutes, but keep an eye on it toward the end since baking times can vary slightly depending on your pan and oven.

→ Make sure the oven is fully preheated - Give your oven enough time to reach 180°C before putting the cobbler inside. Starting with the correct oven temperature helps the cornbread topping rise properly and ensures the peaches have enough time to soften and become juicy.

→ Don’t worry if the batter doesn’t look perfectly even - When you spoon the cornbread batter over the peaches, you don’t need to spread it into a completely smooth, perfect layer. It will spread and puff up as it bakes.

3. Prepare the peaches by scoring a small X on the bottom of each one.

4. Once the water is boiling, blanch the peaches for about 45 seconds each, then transfer them straight into the ice bath.

5. Peel the skins off, then cut each peach in half, remove the pit and slice them to your preferred size.

6. Add the sliced peaches to a bowl along with the brown sugar, cornstarch, vanilla bean powder, cinnamon and lemon juice.

7. Mix everything together and set aside.

8. Preheat the oven to 180°C.

9. Prepare the cornbread batter.

10. In a bowl, combine the flour, cornmeal, granulated sugar, brown sugar, baking powder and salt.

11. Pour in the buttermilk, vanilla and melted butter.

12. Mix until just combined (don’t overmix).

13. Transfer the peaches to a ceramic baking dish.

14. Spoon the cornbread batter evenly over the top.

15. Sprinkle with a little extra sugar.

16. Bake in the preheated oven for about 45 minutes, until the topping is golden and set.

17. As soon as it comes out of the oven, brush or dot the top with butter so it melts over the cornbread. Drizzle with a little honey if you like.
