Cold cream creates a much bigger temperature difference, which can cause the caramel to seize and can also lead to intense bubbling and splattering. I recommend microwaving the cream for about 30 seconds before using it.

→ Add the cream gradually - Slowly pour the warm cream into the caramel while stirring carefully. The mixture will bubble quite vigorously, so adding the cream little by little gives you more control and helps everything come together smoothly.

→ Do not stir the sugar while it melts - Once the sugar starts melting, leave it alone and let it caramelize. Stirring too much can cause the sugar to crystallize. Instead, gently swirl the pan if needed to help the sugar melt evenly.

→ Watch the color carefully - The color of your caramel will determine its flavor. A deeper amber color gives you a stronger, more intense caramel flavor, but taking it too far can make the sauce bitter. Remove it from the heat once it reaches a beautiful amber color.

  • Heavy cream: Gives the caramel its creamy, smooth consistency and helps create the pourable texture. I use 32% fat heavy cream, but regular whipping cream can also be used. Make sure to warm it before adding it to the hot caramel.

  • Pumpkin puree: Adds pumpkin flavor and gives the caramel its pumpkin spiced character. Make sure to use plain pumpkin puree rather than pumpkin pie filling, which already contains added sugar and spices.

  • Pumpkin spice mix: Adds the warm combination of spices that gives this caramel its classic fall flavor. You can use a store-bought pumpkin spice blend or make your own with cinnamon, ginger, nutmeg and cloves.

  • Vanilla bean powder: You can also use vanilla bean paste instead.

3. Once the sugar has dissolved, reduce the heat to medium and let the mixture simmer, without stirring, until it turns a deep amber color. Keep a close eye on it so it doesn’t burn.

4. As soon as the caramel reaches the desired amber color, remove the saucepan from the heat.

5. Gradually whisk in the warmed cream, a little at a time. Be careful, as the mixture will bubble vigorously.

6. Continue whisking until the cream is fully incorporated and the caramel is smooth. If the caramel seizes or becomes lumpy, return the saucepan to low heat and stir constantly until the caramel melts back down and comes to a gentle boil.

7. Once the cream is fully incorporated, whisk in the butter. Return the saucepan to the stove and let the caramel gently boil for about 1 minute, stirring occasionally.

8. Remove from the heat and whisk in the pumpkin puree, salt, vanilla bean powder and pumpkin spice mix until smooth.

9. Strain the caramel into a heat-resistant jar to remove any small lumps.
