Do you like Blueberry Cheesecake and French toast? This recipe is the perfect combination of the two desserts, in breakfast form. The delicious cinnamon flavor of the French toast pairs perfectly with the tangy cream cheese and homemade blueberry jam. I hope you give it a try.

I’m currently working on a little project, or more like a series focused on French toast toppings. My goal is to come up with as many delicious and fun ideas as possible. I already have two done and at least eight more are on my list. I’m planning to write two blog posts for this series. Not every French toast will get its own blog like this one, some are super simple, so I’ll just include them within the main blog posts. The base recipe is pretty much the same each time, with just a few small changes here and there, so it doesn’t make sense to write a whole post for every single one.

But let’s talk about this insanely good Blueberry Cheesecake French Toast. Honestly, I don’t even remember where the idea came from, but it turned out way better than I expected. It’s an easy recipe and perfect for anyone who loves French toast and cheesecake. Of course, I know not everyone enjoys sweet breakfasts, so this recipe could also work great as a brunch option… or even a second breakfast lol.

Just one tip: make sure to cook the bread on medium heat so it doesn’t burn, and flip it after 2–3 minutes. Also, let it cool slightly before adding the cream cheese so it doesn’t melt right away.

Ingredients you will need for this recipe

For the French Toast

  • Brioche bread: A rich, buttery bread that’s perfect for soaking up the custard without falling apart. You can also use regular sandwich bread or milk bread.

  • Milk: Forms the base of the custard mixture.

  • Granulated sugar + vanilla sugar: Sweetens the custard. The vanilla sugar adds an extra layer of flavor that pairs beautifully with the cinnamon and vanilla extract.

  • Egg: The binder.

  • Vanilla extract: Pairs well with both the cinnamon and the cheesecake topping.

  • Cinnamon: Gives the French toast that cozy flavor.

For the Blueberry Jam

  • Blueberries: The star of the topping. When cooked, they break down into a jammy consistency.

  • Granulated sugar: Sweetens the blueberries.

  • Water: Loosens the mixture just enough to cook everything down into a topping.

For the Cream Cheese Frosting

  • Cream cheese: Adds a tangy, rich, cheesecake like flavor.

  • Granulated sugar: Sweetens the cream cheese and balances out its tanginess.

  • Whipping cream: Lightens the mixture and gives it a smoother, fluffier texture compared to using cream cheese alone.

  • Vanilla bean paste or ground vanilla: I recommend using good quality vanilla.

Extras

  • Butter (for cooking): Helps brown the toast nicely in the pan.

  • Powdered sugar (for dusting): For a pretty finish and a little extra sweetness.

  • Crushed butter biscuits (for topping): A crunchy touch that mimics a cheesecake crust. Adds texture and makes it feel more like a dessert.

Step by step directions with photos

1. First prepare the cream cheese frosting. Mix together all the ingredients until smooth and fluffy. Cover and place in the fridge.

2. To make the blueberry jam, add the blueberries, sugar and water to a saucepan and let it simmer over high heat for about 5 minutes until it turns into a thick (but mot too thick) jam.

3. In order to prepare the batter for the french toast, whisk together the milk, egg, cinnamon, sugar and vanilla.

4. Dip the briosche in the milk mixture and cook each slice over medium heat in a bit of butter. (3 minutes each side)

5. Once ready, assemble and enjoy!

For the french toast
  • 2-4 thick slices of briosche bread
  • 100g milk
  • 1 tablespoon granulated sugar + 8g vanilla sugar
  • 1 medium sized egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
For the blueberry jam
  • 80g blueberries
  • 30g granulated sugar
  • 20g water
For the cream cheese frosting
  • 75g cream cheese
  • 25g granulated sugar
  • 45g whipping cream
  • 1 tsp vanilla bean paste or ground vanilla
Extras
  • Butter, for cooking
  • Powdered sugar, for dusting
  • Crushed butter biscuits, for topping
