  • Vanilla Mascarpone cream: This is what I personally served with these pancakes and I absolutely love the combination. I find that Mascarpone pairs beautifully with the vanilla and brown butter and gives the pancakes a richer, more delicate flavor than regular cream cheese.

  • Fresh fruit: Add fresh strawberries, blueberries, raspberries, bananas, or whatever fruit you have on hand for a fresh and slightly lighter contrast.

  • Vanilla custard: A drizzle of warm vanilla custard makes these pancakes extra delicious

  • Caramel: Homemade or store-bought caramel adds a delicious flavor that works especially well with the brown butter.

  • Maple syrup: You can't go wrong with a generous drizzle of maple syrup for a classic pancake topping.

  • Powdered sugar: If you prefer to keep things simple, just dust the pancakes with powdered sugar and serve them with some fresh fruit.

  • Whipped cream: Add a dollop of lightly sweetened whipped cream for an easy and classic topping.

Tips and Tricks

→ Let the brown butter cool before adding it to the batter - Prepare the brown butter in advance and let it cool for about 15 minutes before mixing it into the batter. If it’s too hot, it can affect the texture of the batter.

→ Do not overmix the batter - A few small lumps are completely fine! The batter doesn’t need to be perfectly smooth, and overmixing can make the pancakes less soft and fluffy.

→ Use a non-stick skillet - A good non-stick skillet works best for these pancakes and helps them cook evenly without sticking. You can also lightly butter or oil the skillet to make sure the pancakes release easily.

→ Cook the pancakes over medium heat - Avoid turning the heat up too high, as the outside can burn before the inside has a chance to cook through. Medium heat gives the pancakes enough time to become golden on the outside while staying soft and fluffy inside.

  • Granulated sugar: Adds sweetness to the pancakes and helps give them a lightly golden exterior as they cook.

  • All-purpose flour: The main dry ingredient that gives the pancakes their structure while keeping them soft and tender.

  • Baking powder: Helps the pancakes rise as they cook, giving them their soft and fluffy texture.

  • Salt: Balances the sweetness and enhances the vanilla and brown butter flavors.

  • Eggs: Help bind the ingredients together while adding structure and richness to the pancakes.

  • Vanilla bean paste or ground vanilla powder: Adds plenty of vanilla flavor. I used both, but you can use whichever one you have on hand.

  • Milk: Adds moisture to the batter and helps create a soft, tender texture.

  • Mascarpone: Creates a rich, creamy base for the topping and pairs beautifully with the vanilla in the pancakes.

  • Granulated sugar: Sweetens the mascarpone cream.

  • Vanilla bean paste: Adds a warm, intense vanilla flavor to the cream.

  • Heavy cream: Lightens the mascarpone and makes the cream softer and easier to spoon over the pancakes.

Step By Step Instructions With Photos

1.  Prepare the brown butter.

2. Add the butter to a saucepan and place it over medium heat.

3. Let the butter melt, stirring occasionally.

4. Continue cooking, stirring continuously, until the milk solids turn golden brown and the butter smells nutty and fragrant.

5. Once ready, transfer the brown butter to a separate bowl and set aside to cool for about 15 minutes.

6. Prepare the pancake batter.

7. In a large bowl, whisk together the flour, sugar, salt and baking powder.

8. Add the eggs, milk and vanilla, and mix until just combined. Be careful not to overmix the batter.

9. Once the brown butter has cooled, add it to the batter and gently mix until incorporated.

10. Place a nonstick skillet over medium heat and lightly grease it with butter or oil.

11. Pour about ¼ cup of batter into the skillet for each pancake.

12. Cook until bubbles begin to form on the surface and the edges look set. Flip the pancake and cook for another minute, or until golden brown and cooked through.

13. Transfer the pancakes to a plate and repeat with the remaining batter.

14. Prepare the cream.

15. In a bowl, mix together the mascarpone, sugar and vanilla.

16. Add the heavy cream and mix until the cream becomes smooth.

17. Assemble the pancakes.

18. Stack the pancakes on top of each other, dust with powdered sugar and top with a generous spoonful of cream.

  • 60g unsalted butter (3 tablespoons + 1 teaspoon)
  • 50g granulated sugar (1/4 cup)
  • 250g all purpose flour (2 cups)
  • 10g baking powder (2 teaspoons + 1/2 teaspoon)
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla bean paste or 1/2 teaspoon ground vanilla powder (I used both but you can use whichever you have)
  • 280g milk (1 cup + 3 tablespoons)
For the Cream
  • 250g Mascarpone (1 cup + 1 tablespoon)
  • 50g granulated sugar (1/4 cup)
  • 1 teaspoon vanilla bean paste
  • 50g heavy cream (1/4 cup)
Extras
  • Powdered sugar, for dusting
  • Maple Syrup, for drizzling
  • Fruits of your choice
