These S’mores Pancakes weren’t even on my to do list lol. It all started with a random thought on a Saturday afternoon while I was planning Sunday breakfast. I originally wanted simple Chocolate Chip Pancakes, but that felt too basic and I needed something more special. That’s how this recipe came to life.
What makes them special is the finely crushed graham crackers mixed right into the batter, so every bite has that classic S’mores flavor without being overwhelming. For the topping, I first wanted to go with a store-bought marshmallow fluff, but since I didn’t have any, I improvised with a simple graham cracker frosting. Yes, graham crackers in both the batter and frosting…but trust me it works, especially if you love that cozy graham taste.
I also added a quick chocolate ganache drizzle, though if you’re short on time (or just feeling lazy), melting some milk chocolate in the microwave and drizzling it over the top does the trick. Finally I topped everything with marshmallows and toasted them with a kitchen torch for that campfire finish.

2. Then add the egg, the milk, vanilla and melted butter. Mix until just combined. Overmixing the batter can lead to a though pancake. It’s okay if it’s lumpy.
3. Using an ice cream scoop or a laddle, scoop portions of batter (60g) into a non stick, buttered pan.
4. Cook over medium heat until bubbles appear on the top. Then flip and cook for an additional minute or two.
5. While you cook the pancakes, you can prepare the frosting and the chocolate ganache.
6. For the cream mix together the Mascarpone with the sugar until smooth and creamy.
7. Then add the finely crushed graham crackers along with the vanilla and mix until combined.
8. For the ganache heat the cream until it starts to simmer.
9. Pour it over the chocolate chips and let it sit for a few minutes, then stir until smooth.
10. Once everything is ready, assemble and enjoy!
